A latke (pronounced "lot-key" or "lot-kuh") is a crispy potato pancake fried in oil and traditionally eaten during Hanukkah.

Latkes symbolize the holiday’s miracle of the oil that burned for eight days. Typically made from grated potatoes, onion, egg, and a little flour, latkes are served hot and golden with applesauce or sour cream (applesauce is obviously the better latke condiment).
